The Roll Out
- On April 1st (No Foolin’), we will begin offering our gluten free cookies for sale in one of three ways. You will be able to pick up or have delivered boxes of gluten free cookies for you to enjoy; you will be able to send any of our gifts with gluten free cookies to those that must restrict themselves to wheat and gluten free diets; and you will be able to purchase our gluten free cookie dough to bake these cookies in your own home.
Why the name Gluten Free, Gratefully?
- People have responded to the announcement of our baking delicious gluten free cookies with such gratitude, that we just had to add that to our name.
The what and why of gluten free.
- First, about gluten. Gluten is the “glue” found in all grains (wheat, rye, and barley). Even oats are usually avoided because it is often grown on the same land with rotated wheat based crops. Gluten is a mixture of proteins, particularly with wheat. It is the gliadin component that is responsible for celiac disease. Wheat free is not necessarily gluten free, but gluten free is always wheat free. Huh? Products may be still contain barley or rye and therefore do not make it gluten free. For example, vanilla extract in some products may be made with grain alcohol. Our cookies use certified gluten free pure vanilla. Celiacs must be very aware of these hidden dangers.
What is Celiac Disease?
- Celiac disease is a genetic disorder that affects about 1 in 133 Americans. Symptoms can range from muscle weakness, bone pain, diarrhea, weight loss, abdominal bloating, malnutrition, and anemia. People with celiac disease that eat foods containing gluten over a prolonged period of time have greater increases of gastrointestinal cancer. And as a side note, there is anecdotal evidence that those with symptoms of other auto immune diseases and autism have been reduced or eliminated by omitting gluten in their diets. So, you can see why gluten free food is so important to those afflicted and why we are so pleased to be offering Gluten Free, Gratefully.
Cross Contamination.
- Even 20 parts per million of gluten particles can affect those with celiac disease. So, here’s what we do. We use a separate mixer, separate utensils, separate baking sheets, separate mix containers, and a separate oven to prepare and bake our gluten free cookies. If you have a chance to peak into our open view kitchen you will see these specially marked items in bright red or orange. We even cover our mixer when it’s not in use to avoid any unwanted particles from landing. We make sure that all cookie preparation is isolated from our traditional cookie line up. You can be assured that we are doing everything possible to avoid cross contamination. Do we take this seriously? Very seriously!

Triple Treat. We take our chocolate chip cookie and enhance it with fresh California walnuts and sun sweetened raisins. |

| Peanut-n-Butter. This is the real deal. And yes, we still use a fork to make those traditional hatch marks on top. |
